| Keith Hurdman, master chocolatier and I had many excited and sometimes bizarre chats about flavour combinations that we could use from my book 'Sophie Conran's Pies'. After lots of rapturous tasting sessions, we all agreed that the combination of Earl Grey tea, ginger and cranberry was heavenly. The flavours are exquisitely balanced and the textures scrumptious. The chocolate is a dainty little dark chocolate 'pie' case, filled with a soft, smooth, earl grey tea, hiding a hot chunk of organic crystallised ginger. As a final flourish the 'pie' is topped with a cranberry. A truly british chocolate: classic, extraordinary and just a tiny bit eccentric.
