Gazpacho
Gazpacho is a Spanish, chilled summer soup for hot days and is one of my favourite soups. It can be made very complicated but I like this simple vegetable smoothie-style recipe, which takes just 15 minutes to throw together. Really big tasty tomatoes from a farmers’ market in August would be my ultimate choice.
