February 2019 – Venison

Venison can come from one of the six varieties of deer that roam and forage freely over the hills, heaths, fields, forests and fens of the British Isles. Wild and abundant, it is one of the most sustainable meats of all. Deer are herbivores, and their diet is varied; they enjoy nuts, fruits and berries, but best of all they like my young rose bushes, preferring the new shoots and buds. Venison is one of the leanest meats, and is high in protein and low in cholesterol and calories, so if you happen to still be a carnivore it’s probably the healthiest of all meats. Plus, the good news is it’s fantastically tasty and full of flavour.
