Herring in Oatmeal

This is a super quick and easy lunch or weekday supper as it takes less than 10 minutes to make.
If more people knew how good herring is for you I am sure you would see it on more menus.

Serves 6

2 herrings, filleted
3 handfuls good, organic porridge oats
Salt and freshly ground black pepper
1 egg, beaten
Butter to fry

 
Put the oats onto a plate and season with salt and pepper.

Rinse the herring and pat dry. Dip each fillet into the egg and then coat with oatmeal, patting the oats on so they stick.

Heat the butter in a pan and fry the herring on both sides until golden. Serve with lemon wedges and a lovely crisp salad.
